
I accidentally chose three recipes that all needed oven time this month, which led to some juggling and a bit of time over run.
First up was a recipe I created a few years ago to use up leftover Christmas mincemeat - muffins
These muffins are tender and delicious, especially still warm, straight from the oven. They are not overly sweet as I have reduced the sugar right down, mincemeat is very sweet, so we don’t need to add much more.

Next we made what is described as a high protein freezer breakfast burrito. Very versatile as you can change the veg to be whatever you like best, maybe add a few beans too. Freeze them and grab one for breakfast, heat it in the air fryer if you have one for just a couple of minutes and dip in your favourite sauce.

And we finished up with Mary Berry's amazing soufflé croutons. I have made these as whole slices too as they make a delicious lunch with a little salad
