Cooking Up a Storm - June 2024

First we made Cheese Baked Broccoli Fritters from Nagi Maehashi's book, Dinner.

The recipe uses a whole head of broccoli cut very small, eggs, seasonings and cheddar. The mix is then shaped into fritters and baked in the oven.

Very very tasty!

Nagi writes the Australian food blog RecipeTinEats and her recipes are amazing! I use recipes from Nagi quite often.

Next up was Orecchiette with spicy sausage and broccoli sauce. Delicious!

First of all we made the orecchiette by hand. This is made with 100% semolina, no flour at all. It is actually pretty easy, and quite soothing. It takes 10 minutes to cook, whilst fresh wheat flour pasta usually takes one minute.

It was a recipe I made whilst on a southern Italian cookery day at Ashdown Manna. It's quite expensive at £140 for a day's course, but I made 8 gorgeous recipes in that time, and cooking is a big interest of mine, so I justified it that way.

The final recipe this month was Sweet Potato Cakes. This one came about because I have started having an Oddbox every two weeks and I'd got lots and lots of sweet potatoes to use up so I was cruising Google looking for recipes.

Sweet potatoes are cooked and mashed. The mixed with a little gram flour, ginger, coriander, chilli and yogurt, shaped into patties and fried. Then served with mango chutney.

Really nice.
